Yields: 24 Caramels
Prep Time: 5 minutes
Cook Time: 30-40 minutes on the stovetop 6-8 minutesin the microwave

Ingredients

  • 1 can (14 oz / 397 g) sweetened condensed milk

Directions

  1. Prepare the Pan: Line an 8x8-inch square pan with parchment paper and lightly grease to prevent sticking.

  2. Cook the Condensed Milk (Choose Method): Stovetop: Pour condensed milk into a heavy-bottomed saucepan. Cook over low to medium-low heat, stirring constantly with a silicone spatula for 30–40 minutes. Scrape the sides and bottom often to prevent scorching. The mixture will thicken, darken to a golden caramel color, and pull slightly away from the sides when ready.

  3. Microwave: Pour condensed milk into a large microwave-safe bowl. Microwave in 1-minute bursts, stirring well after each. Continue for 6–8 minutes, until thickened and caramel-like.

  4. Set the Caramels: Immediately pour the thick caramel mixture into the prepared pan. Smooth the top with a spatula. Cool at room temperature, then refrigerate until firm (1–2 hours).

  5. Cut and Wrap: Lift the caramel slab out by the parchment, cut into squares or rectangles, and wrap in wax paper or parchment squares for storage.
