Ingredients
1 ¾ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 ½ tsp ground cinnamon
½ tsp ground nutmeg (optional)
½ cup unsalted butter, melted
½ cup brown sugar
¼ cup granulated sugar
2 large eggs
½ cup milk
1 tsp vanilla extract
1 ½ cups peeled and finely chopped apples
Streusel Topping:
¼ cup all-purpose flour
¼ cup brown sugar
½ tsp ground cinnamon
2 tbsp cold unsalted butter, cubed
Directions
Prep the Oven & Pan: Preheat oven to 375°F (190°C). Line or lightly grease a 12-cup muffin tin.
Make the Batter: Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl. In a large bowl, whisk the melted butter, brown sugar, granulated sugar, eggs, milk (or yogurt), and vanilla until smooth. Fold in the chopped apples, then gently mix in the dry ingredients until just combined.
Add Streusel (Optional): In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter until crumbly. Spoon the muffin batter into the cups, filling each about ¾ full, and sprinkle with streusel if using.
Bake & Cool: Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
