Yield: 8 scones
Prep Time: 20 minutes
Cook Time: 18-22 minutes
Special Equipment: Baking sheet
Ingredients
2 1/2 cups all purpose flour
1 tbsp baking powder
1 tsp fine salt
1/2 tsp black pepper
1/2 tsp garlic powder optional
1/2 cup cold unsalted butter, cubed
1 cup sharp cheddar cheese, shredded
6 slices bacon, cooked crisp and chopped
1/2 cup finely diced onion or 1/3 cup caramelized onion
2 tbsp chives or green onion optional
3/4 cup cold heavy cream
1 large egg
Heavy cream for brushing tops
Directions
Cook bacon until crisp and chop. In a small skillet sauté the onion in a little bacon fat until soft and lightly golden, then allow to cool.
In a large bowl whisk flour, baking powder, salt, black pepper, and garlic powder. Cut in the cold butter until the mixture resembles coarse crumbs.
Fold in cheddar cheese, chopped bacon, sautéed onions, and chives if using.
Whisk together heavy cream and egg, pour into the flour mixture, and gently mix until a shaggy dough forms.
Turn dough onto a lightly floured surface and pat into about a 1 inch thick round. Cut into 8 wedges and place on a parchment lined baking sheet.
Chill the shaped scones 15 to 20 minutes, brush tops with cream, and bake at 400°F for 18 to 22 minutes until golden and puffed.
