Cilantro Lime Rice Pilaf

This delicious rice pares well with fish, steak and chicken! It’s a healthy and packed full of flavor side! A great way to boost your rice game!

🍚 Cilantro Lime Rice Pilaf

📖 Ingredients:

⭐️ 1 C. Basmati Rice

⭐️ 1.5 C. Water

⭐️ 1 Lime, Juiced & Zested

⭐️ 3 Cloves of Garlic, Minced

⭐️ 1/2 TSP Pink Himalayan Salt

⭐️ 1 Small Tomato, Diced

⭐️ 1/2 C. Fresh Cilantro, Chopped

⭐️ 2 TBSPS Butter, Salted

📖 Recipe:

1. Mince garlic and wash your rice. Add both to a pot with your butter and toast your rice on a medium heat.

2. Once toasted to a golden color (make sure to constantly stir the rice and garlic so that it doesn’t burn), add your salt, water and lime juice to the pot. Cover with a lid and place on a high heat and boil your rice. Once it starts to boil place the rice on a low heat. When water is gone turn off the eye and let it sit ten minutes.

3. While the rice is sitting, prepare your tomato and cilantro.

4. Once rice and vegetables are done, add them all to a serving dish and mix well together.

5. Top with grated lime zest.

6. Serve and enjoy with any baked or grilled protein and vegetable side of your choosing!
