Cloud Bread Cinnamon Rolls

A light and fluffy twist on cinnamon rolls using a cloud bread base. These are low-carb, high-protein, and sweetened with stevia or monk fruit for a healthier treat.

Ingredients

  • ½ tsp cinnamon

  • ¼ cup plain Greek yogurt (0–2%)

  • ½ tsp vanilla extract

  • Stevia or monk fruit (or another sweetener) to taste

  • Egg whites, beaten until thick (for the “cloud bread” base)

 

Directions

  1. Beat Egg Whites: In a clean bowl, beat egg whites until stiff peaks form.

  2. Make Cinnamon Mixture: In a separate bowl, combine Greek yogurt, vanilla, cinnamon, and sweetener. Mix until smooth.

  3. Bake the Cloud Bread Base: Spread the whipped egg whites onto a greased parchment-lined baking sheet. Bake at 300°F (150°C) for 20 minutes until set.

  4. Add Swirl: While warm, spread the cinnamon mixture evenly across the baked cloud bread. Sprinkle with extra cinnamon or a cinnamon-sweetener mix if desired.

  5. Shape Rolls: Let cool slightly, then roll up from the long side. Slice into rolls.

  6. Serve: Enjoy as-is or warm slightly before serving.
