Creamed Spinach

 

Ingredients

  • 1 pound baby spinach

  • 1/2 cup butter

  • 2 tablespoons finely chopped onions

  • 1/4 cup AP flour

  • 2 cups whole milk

  • 1 bay leaf

  • 1/2 teaspoon salt

  • 1/8 teaspoon ground nutmeg

  • 1/8 teaspoon black pepper

 

Directions

  1. Bring 2 quarts of water to a boil. Add spinach to boiling water for 1 minute. Immediately move blanched spinach to a bowl of ice water to stop cooking.

  2. Squeeze all water from spinach using a clean dish towel or paper towel.

  3. Empty the saucepan in which you boiled the spinach, and melt butter over medium heat. Add the onion and cook until softened about 2 minutes.

  4. Add flour and stir for about 3 minutes until golden. Slowly add milk, stirring or whisking constantly until mixture boils and begins to thicken.

  5. Stir in the nutmeg, bay leaf salt and pepper. Reduce heat to low, cook and stir for about 5 minutes. remove the bayleaf.

  6. Stir in the spinach and simmer for 5 minutes. More salt and pepper, to taste.

  7. Serve immedately.
