Daphne’s Butter Swim Biscuits are so easy to make, you won’t believe how decadent they are! Butter is melted in a dish then filled with a scratch biscuit batter, letting the biscuits bake in the butter. Be sure to make this next time you have a gathering!
Yield: 9 biscuits
Prep Time: about 10 minutes
Cook Time: 20-30 minutes
Special Equipment: 8x8 oven safe baking pan
Ingredients
1 ¾ cups buttermilk, room temperature
½ cup unsalted butter, cut into 1-inch cubes
2 ½ all-purpose flour
4 tsp baking powder
1 Tbsp sugar
2 tsp kosher salt
Directions
Preheat & Melt: Preheat oven to 450 degrees. Place butter in an 8x8 oven safe baking pan, then transfer to the oven to melt, about five minutes. Be sure to watch the butter so it doesn’t burn. Remove from the oven and set aside.
Make the Batter: Whisk together the flour, baking powder, sugar, and salt. Use a spatula to stir in the room temperature buttermilk just until it combines, careful not to overmix, with no visible streaks of flour.
Bake: Transfer batter to the hot baking pan and spread evenly. The butter will rise to the top. Cut the batter into 9 squares, and go over the cuts a couple of times, wiping the knife in between cuts. These cuts won’t be perfect. Bake until the edges start to crisp and the top is golden brown, about 20-25 minutes, and rotate the dish halfway through.
