Doctored Strawberry Cake Mix
A rich, bakery style strawberry cake made from a boxed mix with added strawberry flavor, butter, and buttermilk for a soft, moist crumb. Finished with a creamy strawberry cream cheese frosting.

Ingredients
1 box strawberry or white cake mix
1 (3 oz) box strawberry Jello
2 oz water
¼ cup flour
¾ cup strawberry puree
1 tsp strawberry extract or emulsion
Frosting:
½ cup butter, melted
½ cup buttermilk
4 eggs
½ cup butter, room temperature
8 oz cream cheese, room temperature
4 cups powdered sugar
⅓ cup strawberry puree
Directions
In a small bowl combine strawberry Jello and 2 oz water and stir until dissolved.
In a large bowl add cake mix, dissolved Jello, flour, strawberry puree, strawberry extract, melted butter, buttermilk, and eggs and mix just until incorporated, scraping the bowl as needed.
Pour batter into two 8 inch pans or three 6 inch pans lined with parchment and bake at 350°F for 25 to 30 minutes until a toothpick comes out with a few moist crumbs. Cool completely.
Beat butter and cream cheese until light and fluffy. Add powdered sugar in batches and mix until smooth, then mix in strawberry puree and food coloring if using.
Frost and assemble the cake as desired.
