Yields: 20 donut holes
Prep Time: 15 minutes
Cook Time: 15 minutes
Special Equipment: electric skillet or deep fryer
Ingredients
2 cups all-purpose flour
¼ cup granulated sugar
1 ½ tsp baking powder
1 large egg
1 cup whole milk
1 ¼ tsp vanilla extract
¼ cup melted butter
Vegetable oil, for frying
Ganache:
1 cup milk chocolate chips
¼ cup heavy cream
Optional Coating:
Cinnamon sugar, for rolling
Directions
Prepare the Station: Line a baking sheet with paper towels and place a wire rack on top for draining.
Heat the Oil: Pour vegetable oil into an electric skillet (or deep pan) until about halfway full. Heat to 350°F.
Mix the Dry Ingredients: In a medium bowl, whisk together the flour, sugar, and baking powder.
Mix the Wet Ingredients: In a separate bowl, whisk together the milk, vanilla, and egg.
Combine the Batter: Pour the wet mixture into the dry ingredients and stir until combined. Add melted butter and stir until a thick batter forms.
Fry the Donut Holes: Using a 1 tbsp ice cream scoop, carefully drop batter into the hot oil. Fry 2–3 minutes per side, until golden brown. Transfer to the prepared rack.
Make the Ganache: Melt chocolate chips using the double boiler method (a heat-safe bowl over a saucepan with simmering water). Stir in heavy cream until smooth and glossy.
Fill the Donut Holes: Fit a piping bag with a cake tip (or snip the end). Fill with ganache, insert into the center of each donut hole, and squeeze gently until full.
Optional Finish:
Roll each filled donut hole in cinnamon sugar for extra sweetness.
Serve and Enjoy: Serve warm and enjoy the gooey chocolate center!
