Yields: 8-10 servings
Prep Time: 15 minutes
Cook Time: 45 minutes
Special Equipment: large skillet, large pot

Ingredients

  • 5 lbs Yukon Gold or russet potatoes, peeled and cubed

  • 2 whole heads of garlic

  • 2 Tbsp olive oil

  • 1 cup sour cream

  • 4 oz cream cheese, softened

  • 1 cup unsalted butter

  • Salt and black pepper, to taste

Optional: ½ cup milk or half-and-half for extra creaminess

Directions

  1. Roast the Garlic: Slice the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast at 350°F (175°C) for 45 minutes until soft and golden.

  2. Boil the Potatoes: Place cubed potatoes in a large pot of salted water. Boil for 25–30 minutes, or until fork-tender. Drain and return to the pot.

  3. Mash and Mix: Squeeze the roasted garlic cloves into the potatoes. Add butter, cream cheese, and sour cream. Mash until smooth and creamy. Add milk or half-and-half if needed to loosen the texture.

  4. Season: Stir in salt and pepper to taste. Garnish with chives or parsley if desired.
