Garlic Mashed Potatoes

Ingredients
5 lbs Yukon Gold or russet potatoes, peeled and cubed
2 whole heads of garlic
2 Tbsp olive oil
1 cup sour cream
4 oz cream cheese, softened
1 cup unsalted butter
Salt and black pepper, to taste
Optional: ½ cup milk or half-and-half for extra creaminess
Directions
Roast the Garlic: Slice the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast at 350°F (175°C) for 45 minutes until soft and golden.
Boil the Potatoes: Place cubed potatoes in a large pot of salted water. Boil for 25–30 minutes, or until fork-tender. Drain and return to the pot.
Mash and Mix: Squeeze the roasted garlic cloves into the potatoes. Add butter, cream cheese, and sour cream. Mash until smooth and creamy. Add milk or half-and-half if needed to loosen the texture.
Season: Stir in salt and pepper to taste. Garnish with chives or parsley if desired.
