Roasted Tomatillo Salsa

A fresh, tangy homemade salsa made with blistered tomatillos, onion, jalapeño, garlic, lime, and cilantro.

Prep Time: 10 minutes
Cook Time: 15 minutes
Special Equipment: cast iron skillet and blender

 

Ingredients

  • 4 medium tomatillos

  • 6 garlic cloves

  • ½ bunch cilantro

  • Juice from 3 limes

  • ½ white onion

  • 1 jalapeño, seeded for less spice

  • Salt and pepper to taste

 

Directions

  1. Blister the tomatillos and onion in a cast iron skillet until lightly charred and softened.

  2. Add the blistered tomatillos and onion to a blender along with the garlic, cilantro, lime juice, jalapeño, salt, and pepper.

  3. Blend until smooth. Taste and adjust the salt and pepper as needed.
