Leftovers Crispy Tacos

Tricia (SketchyChef) got me right in the belly with these Leftovers Crispy Tacos . I love any kind of fried treat and this one was a clever way to adapt leftovers.

Leftovers Crispy Tacos 

Preparation:

  • Heat oil in a pan

  • Corn Tortillas softened in the microwave ( 10 tortillas high heat for 30-45 seconds) 

  • Place leftovers of your choice in the Tortillas 

  • Example : 

  • Add Sweet potatoes  or mashed potatoes , stuffing , Turkey or Ham 

  • Cranberry Sauce. 

  • Fold taco in half and fry in oil until Crispy on both sides

  • Remove and briefly let drain on paper towel. If making a lot keep them warm in the oven. 

  • Serve with Cranberry Sour Cream ( 1/4 c sour cream 2 tbs cranberry sauce ) or other sauce, salsa or dip you have handy. 

    Keep it Sketchy & Enjoy

  1. Heat oil and cook garlic til lightly browned

  2. Toss in rice til heated , add meats & raw veggies , toss til softened , 

  3. Make a well  in rice and add eggs, scramble then incorporate into rice. Add peas and soy sauce as desired . Gently Stir it altogether until combined .
