Lemon Lush

A classic layered lemon dessert with a buttery shortbread crust, sweet cream cheese layer, smooth lemon pudding, and fluffy whipped topping. Light, creamy, and perfect served cold.

Ingredients

  • 2 cups all purpose flour

  • 1 cup butter, softened

  • 2 packages 8 oz cream cheese, softened

  • 1 cup granulated sugar

  • 3 1/2 cups milk

  • 2 packages 3.4 oz instant lemon pudding mix

  • Topping

  • 1 container 12 oz cool whip thawed

 

Directions

  1. Preheat oven to 350 degrees and grease a 9 by 13 baking dish.

  2. Mix flour and butter until crumbly, press into the bottom of the dish, and bake about 25 minutes until lightly golden. Cool completely.

  3. Beat cream cheese and sugar until smooth and spread over the cooled crust.

  4. Whisk milk and lemon pudding mix until thickened, then spread over the cream cheese layer.

  5. Spread whipped topping evenly over the pudding layer.

  6. Chill until fully set before serving.
