Mexican Squash

A simple tender vegetable skillet with melted cheese and Mexican oregano, packed with flavor and ready in minutes. Perfect as a side dish for any Mexican meal

Ingredients

  • 1 tablespoon olive oil

  • 2 squash sliced

  • ½ onion sliced

  • 1 roasted pepper sliced optional

  • 1 Roma tomato sliced

  • 2 garlic cloves minced

  • 4 oz Monterey Jack or mozzarella grated

  • Pinch of Mexican oregano

  • Salt and pepper

  • Fresh cilantro chopped

 

Directions

  1. Heat oil in a skillet over medium and cook onion and garlic until fragrant.

  2. Add squash tomato and roasted pepper then season with oregano salt and pepper and stir well.

  3. Cover reduce heat to low and cook until vegetables are tender.

  4. Add cheese on top and let it melt into the squash.

  5. Garnish with cilantro and serve.
