Mom's Potato Salad

A classic family style potato salad made with tender potatoes, crunchy celery, hard boiled eggs, sweet pickle relish, and a creamy mustard dressing. The perfect make ahead side dish for cookouts, holidays, and family dinners.

Ingredients

  • 6 russet potatoes, peeled if desired and cut into large chunks

  • 1 cup chopped celery

  • 4 to 6 hard boiled eggs, diced

  • 1/2 cup red onion, finely diced

  • 1/2 cup sweet pickle relish

  • 1/2 cup mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp yellow mustard

  • 1/4 tsp garlic salt

  • 1/4 tsp celery salt

  • Salt and pepper, to taste

 

Directions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook for about 15 minutes, or until fork tender but not falling apart. Drain and let cool completely. Cut into bite sized pieces if needed.

  2. In a large mixing bowl, combine the potatoes, celery, diced eggs, red onion, sweet pickle relish, mayonnaise, Dijon mustard, yellow mustard, garlic salt, and celery salt. Gently stir until everything is evenly coated.

  3. Season with salt and black pepper to taste. Cover and refrigerate for at least 1 hour before serving.
