Mustard Roasted Cauliflower

 

Ingredients

  • 1 head cauliflower, trimmed

  • 3 Tbsp olive oil

  • 1.5 Tbsp apple cider vinegar

  • 1.5 Tbsp dijon

  • 1 Tbsp whole-grain mustard

  • 1/4 cup olive oil

  • salt and pepper

 

Directions

  1. Preheat a foil lined sheet tray in the oven 400°F.

  2. In a bowl with a whisk or in a jar with a lid (I go with an almost empty container of mustard!), add the olive oil, vinegar, mustards, salt and pepper. Whisk or shake aggressively to combine.

  3. Toss the cauliflower in a large bowl with the mixture. Let it sit for five minutes on the counter.

  4. Remove the sheet tray from the oven. Carefully and quickly spread the cauliflower before returning the pan to the oven.

  5. Let this roast for about 20 minutes, tossing halfway through. If you get to where the char on the outside looks great, but the cauliflower is underdone, add a piece of foil over the top to let it steam in the oven.

  6. Remove from the oven and serve
