Peppermint Chocolate Cupcakes

Soft chocolate cupcakes with a cool peppermint finish, topped with a creamy frosting and crushed candy canes. Simple to make and perfect for holiday dessert tables

Ingredients

  • chocolate cake mix 1 box 15.25 oz

  • buttermilk 1 cup

  • vegetable oil ½ cup

  • eggs 3

  • vanilla extract 1 tsp

  • peppermint extract 1 tsp

  • vanilla or cream cheese frosting 16 oz

  • additional peppermint extract 1 tsp

  • red food coloring optional

  • crushed candy canes

  • mini chocolate chips or sprinkles

 

Directions

  1. Mix the cake mix with buttermilk oil eggs vanilla and peppermint extract until smooth.

  2. Line muffin tins and fill each cup about two thirds full. Bake at 350°F for 18 to 20 minutes and cool completely.

  3. Stir peppermint extract into the frosting. Tint part of it red if a swirl effect is desired and place side by side in a piping bag.

  4. Frost cupcakes and top with crushed candy canes and chocolate chips
