Pineapple Upside Down Puff Pastry

Jess found this viral puff pastry method on @tom.smallwood tik tok page. He gives you quite a few different recipes for this upside down method, and we decided to make an inspired version of his sweet pastries. I personally love a pineapple upside down cake, it is sweet and buttery with that tartness of your pineapple so we tried to replicate that on our puff pastry today. I think this recipe and this style of baking puff pastry is definitely worth the messy! Really family friendly and fun for anyone!

Pineapple Upside Down Puff Pastry

Ingredients

  • Pineapple,

  • honey,

  • cinnamon,

  • brown sugar,

  • butter, salt,

  • puff pastry

  • sweetened condensed milk

Directions

  1. On a parchment lined cookie sheet, pour a dollop of local honey directly on to the paper, on the honey.

  2. Add a thinly sliced piece of pineapple, a sprinkle of brown sugar, a dollop of butter, a touch of salt and finally a sprinkle of cinnamon.

  3. Gently lay a sheet of puff pastry directly on top of your pineapple, make sure to press the pastry around the sugar and pineapple to help from all of that sugary goodness escaping from the pastry while it cooks.

  4. Bake the pastry in a 425F degree oven for up to 10 minutes.

  5. While the pastry is still hot flip over and let sit until nicely warm.

  6. Top with sweetened condensed milk and eat.
