Shaved and Massaged Brussels Sprouts Caesar

The key part of this recipe is massaging the Brussels sprouts in olive oil. This alleviates the bitterness it can have and adds a nutty and sweeter flavor.

 

Ingredients

  • 24 oz brussels sprouts

  • 2 raw egg yolks (pasteurized)

  • 1 tsp dijon

  • 2 garlic cloves, chopped

  • 3-5 anchovy filets or 2-3 tsp anchovy paste

  • 2 Tbsp lemon juice

  • 1/2 tsp lemon zest

  • salt and pepper to taste

  • 1/2 cup neutral oil +2 Tbsp

  • 2 Tbsp parm cheese +more for garnish

 

Directions

  1. Wash the brussels sprouts and shave them thinnly using a mandolin if possible.

  2. Add 2 Tbsp neutral oil to the shaved sprouts. Wear gloves and massage the oil into the greens for about 5-10 minutes.

  3. To a blender or a container fit for immersion blending, add the 3-5 anchovies, 2 egg yolks, garlic, 1 tsp dijon, and 2 Tbsp lemon juice. Process this mixture.

  4. SLOWLY stream the oil into the mixture while the blender is on. Add 2 Tbsp parmesan cheese to the mix. Taste the dressing to adjust

  5. Add the dressing to the Brussels sprouts and combine. Garnish this with more parmesan cheese on top and fresh cracked pepper
