SOPA DE CAMARON ( SHRIMP SOUP )

INGREDIENTS
- Bell peppers different color each one ( red, green and orange ). 
- White onions. 
- 3 Yukon potatoes. 
- Angel hair pasta. 
- 5 oz. of milk. 
- 4 tablespoons of butter 
- 3 tablespoons of anatto oil. 
- Cilantro 
- Salt kosher, black pepper. 
- 1 tablespoon of garlic paste. 
- 6 cups of water. 
- 1 pounds shrimp XL ( extra large ). 
PREPARATION
PREPARATION OF SOFRITO OR REFRITO
- start chopped the onions and peppers. 
- add the butter on the pan ( medium heat ) 
- add or veggies sautéed seasoning with salt, black pepper, garlic paste and anatto oil and mixed. 
- when the veggies are ready turn off the stove, the sofrito have to be juicy not dried. 
PREPARATION OF THE SOUP
- Add 6 cups of water in the casserole left boil for 6 minutes high heat. 
- The water is boil add the potatoes (cut the potatoes into cubes) add the sofrito, cook ( medium heat ). 
- when the potatoes is close to be ready add the angel hair pasta just a little bit not to much, taste the soup is need salt, can you add 1 tablespoon of chicken bouillon power. 
- peeled the shrimp and cleaned. 
- when the potatoes are ready with the pasta add the shrimp, chop the cilantro and add to the soup.
