Southern Tomato Pie

 

Ingredients

  • 1 unbaked pie crust

  • 3-4 tomatoes, sliced 1/4-inch

  • 1 teaspoon salt

  • ½ cup chopped sweet onion

  • ½ cup chopped green onion

  • 1 clove garlic, minced

  • 1 cup grated mozzarella cheese

  • ½ cup grated sharp cheddar cheese

  • ½ cup grated parmesan cheese

  • ¾ cup mayonnaise

  • Freshly ground black pepper, to taste

 

Directions

  1. Preheat the oven to 375°F.

  2. Line a baking sheet with paper towels. Arrange the tomato slices in a single layer on the towels and sprinkle with salt to draw out excess moisture. Let them sit for 10-15 minutes, then pat-dry with fresh paper towels to prevent a soggy pie.

  3. Roll out the pie crust and use it to line a pie plate. Crimp the edges and poke holes in the bottom using a fork. Par-bake the crust for 10 minutes; it won’t fully bake, so no need for pie weights.

  4. While the crust bakes, combine the sweet onion, green onion, and garlic in a bowl. In a separate bowl, mix the mozzarella, sharp cheddar, parmesan, and mayonnaise. Season with freshly ground black pepper.

  5. Layer the ingredients: Start with half of the tomatoes on the crust, followed by half of the onion mixture. Repeat with the remaining tomatoes and onions. Spread the cheese mixture over the top.

  6. Reduce the oven temperature to 350°F. Bake the pie uncovered for 30 minutes until the cheese is lightly browned. Let it rest for 10 minutes, then slice and serve warm.
