Stuffed Jack-o-lantern Peppers

Sometimes spooky can be savory

Stuffed Jack-O’-Lantern’s

Servings: 2

Ingredients:

  • 2-3 bell peppers

  • 2 chicken tenderloins

  • 1/2 block cream cheese

  • 1/4 c shredded mozzarella

  • 1/4 c shredded cheddar blend

  • 1/4 c rice

  • 1/4 c heavy cream

  • 2 Tbsp vegetable oil

  • 1-2 Tbsp real butter

Seasonings: Garlic, Onion, Italian & All Purpose Seasoning (Slap Ya Mama for me)

Directions:

  1. Wash and dry your peppers

  2. Carve the top off and clean the seeds out

  3. Heat a pan/skillet then add 2 Tbsp oil

  4. Pat dry and season your chicken

  5. Sear each side for 2-3 minutes each

  6. Remove chicken and let cool

  7. Pre-heat oven to 375 degrees Fahrenheit

  8. Add the cream cheese to the same skillet

  9. Shred chicken after it rests

  10. Add the chicken back in the skillet

  11. Add the rice, shredded cheese & combine

  12. Combine and add the heavy cream to thin

  13. Stuff your peppers & add to casserole dish

  14. Add a little water to the bottom of dish

  15. Bake for about 15 minutes or until desired
