Air Fried Potato Chips

Crispy homemade air fryer potato chips seasoned with bold spices and served with a creamy mustard dipping sauce. A perfect snack or appetizer with minimal oil and maximum flavor.

Yields: 1 potato per person
Prep Time: 35 minutes
Cook Time: 15 minutes
Special Equipment: air fryer, mandolin

Ingredients

  • Russet potatoes (scrubbed) – 1 per person

  • Avocado oil

  • Garlic powder

  • Chili powder

  • Sea salt

  • Fresh thyme (optional, for garnish)

  • Hellman’s plant-based mayo

  • Yellow mustard

Directions

  1. 1. Slice your potatoes paper thin using a good knife or a mandolin.

  2. Soak the slices in a bowl of cold water for 30 minutes.

  3. Drain and pat the slices dry with a towel.

  4. Toss slices in a bowl with a drizzle of avocado oil, garlic powder, chili powder, and sea salt. Use just a small amount of oil to help them crisp.

  5. Preheat your air fryer to 360°F. Place potato slices in a single layer in the air fryer—do not overlap. You’ll need to do this in batches.

  6. Air fry for about 12 minutes. Check them at the 10-minute mark, flip, and remove any chips that are already crispy. Transfer crispy chips to a bowl, sprinkle with sea salt, and toss. Optional: Garnish with fresh thyme.

  7. For the dip, mix equal parts Hellman’s plant-based mayo and yellow mustard in a small bowl. Add one extra squirt of mayo and stir until smooth.

  8. Serve chips with the creamy mustard sauce and enjoy.
