Yields: 1 potato per person
Prep Time: 35 minutes
Cook Time: 15 minutes
Special Equipment: air fryer, mandolin
Ingredients
- Russet potatoes (scrubbed) – 1 per person
- Avocado oil
- Garlic powder
- Chili powder
- Sea salt
- Fresh thyme (optional, for garnish)
- Hellman’s plant-based mayo
- Yellow mustard
Directions
- 1. Slice your potatoes paper thin using a good knife or a mandolin.
- Soak the slices in a bowl of cold water for 30 minutes.
- Drain and pat the slices dry with a towel.
- Toss slices in a bowl with a drizzle of avocado oil, garlic powder, chili powder, and sea salt. Use just a small amount of oil to help them crisp.
- Preheat your air fryer to 360°F. Place potato slices in a single layer in the air fryer—do not overlap. You’ll need to do this in batches.
- Air fry for about 12 minutes. Check them at the 10-minute mark, flip, and remove any chips that are already crispy. Transfer crispy chips to a bowl, sprinkle with sea salt, and toss. Optional: Garnish with fresh thyme.
- For the dip, mix equal parts Hellman’s plant-based mayo and yellow mustard in a small bowl. Add one extra squirt of mayo and stir until smooth.
- Serve chips with the creamy mustard sauce and enjoy.
