BBQ Chipotle Pork Loin
A bold, smoky, and slightly sweet pork loin infused with the heat of chipotle chiles, balanced by coffee, apple cider vinegar, and brown sugar. Perfect for grilling and basting to create a rich, caramelized crust.

Ingredients
2–3 lbs boneless pork loin
2 tbsp vegetable oil
¾ cup onion, minced
2 garlic cloves, minced
7 oz chipotle chiles in adobo, finely chopped (adjust to taste)
1 cup strong black coffee
½ cup apple cider vinegar
½ cup apple juice or cider
½ cup brown sugar, packed
3 tbsp tomato paste
2 tbsp Worcestershire sauce
Salt, to taste
Optional: Zest of 1 lime
1 tsp smoked paprika
1 tbsp maple syrup
Directions
Make the Marinade: Heat oil in a saucepan over medium heat. Sauté onion and garlic until translucent. Stir in chopped chipotle peppers and adobo sauce. Add coffee, vinegar, juice, brown sugar, tomato paste, and Worcestershire. Whisk well. Simmer for 5–6 minutes. Cool and refrigerate until chilled.
Marinate the Pork: Place pork loin in a large resealable bag or bowl. Pour marinade over it. Marinate for 12 to 48 hours, turning occasionally.
Grill & Baste: Preheat grill to medium-high. Remove pork from marinade. Boil marinade for at least 5 minutes to make it food-safe and slightly thickened. Grill pork, fat side down, turning and basting every 10–15 minutes. Cook until internal temperature reaches 150°F (about 50–60 minutes depending on grill).
Rest & Serve: Let pork rest for 10 minutes before slicing. Serve with reheated sauce, Spanish rice, and black beans or your own signature sides.
