Birria Tacos

For 5 lbs Chuck Roast

To Blender Add:

6 Chili Cascabel ( Guajillo ) *de seeded

4 Chili Ancho *de seeded

6 garlic cloves

1 small onion

6 tomatoes.

Blend ingredients in a blender with 4 cups Hot water & Beef Bouillon ( or Broth ) until smooth.

Place Meat in crock pot , add 1 small cinnamon stick , 2 bay leaves , 6 cloves and cover with Blended Mixture add aprox 2 cups water , sauce should be more liquid than thick.

Cook 6 hours on low or until meat falls apart easily . Remove from crockpot and shred.

Assembly :

Lightly oil a skillet

Dip a corn tortilla into the liquid used to cook Meat and place in hot pan , add shredded beef and shredded Oaxaca cheese or any melting cheese , fold and cook on each side. Repeat for each taco.

Top with diced onion , chopped cilantro, Lime & radish ( optional)

Serve with Blended Broth Mixture used for cooking meat to Dip each Taco.
