Blackberry Cobbler for Two

Ingredients
Topping
1/2 cup AP flour
3 tablespoons sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup milk
2 tablespoons butter, melted
Filling
1/3 cup sugar
1 tablespoon cornstarch
6 oz Blackberries (fresh)
1/4 cup red wine
1/4 cup water
1/4 teaspoon vanilla extract
1 teaspoon sugar
Directions
Adjust oven rack to middle position and preheat to 400 degrees. Whisk first 4 ingredients in cereal size bowl.
Add butter and milk, stir until just combined. Cover and set aside.
For the filling: In a 8-inch skillet whisk sugar, cornstarch and salt. Add water, red wine and vanilla. Bring mixture to simmer, whisking frequency until thickened, 1-3 minutes. Add blackberries until heated through, 2 minutes.
Scoop 1 inch portions of dough onto the top of the filling. Sprinkle with sugar. Place in oven until biscuits are golden brown, 20-25 minutes.
Let cool for 15 minutes and serve.
