Blackberry Cobbler for Two

Ingredients

Topping

  • 1/2 cup AP flour

  • 3 tablespoons sugar

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

  • 1/4 cup milk

  • 2 tablespoons butter, melted

  • Filling

  • 1/3 cup sugar

  • 1 tablespoon cornstarch

  • 6 oz Blackberries (fresh)

  • 1/4 cup red wine

  • 1/4 cup water

  • 1/4 teaspoon vanilla extract

  • 1 teaspoon sugar

 

Directions

  1. Adjust oven rack to middle position and preheat to 400 degrees. Whisk first 4 ingredients in cereal size bowl.

  2. Add butter and milk, stir until just combined. Cover and set aside.

  3. For the filling: In a 8-inch skillet whisk sugar, cornstarch and salt. Add water, red wine and vanilla. Bring mixture to simmer, whisking frequency until thickened, 1-3 minutes. Add blackberries until heated through, 2 minutes.

  4. Scoop 1 inch portions of dough onto the top of the filling. Sprinkle with sugar. Place in oven until biscuits are golden brown, 20-25 minutes.

  5. Let cool for 15 minutes and serve.
