Sourdough Flatbread
Soft and chewy sourdough flatbread with great flavor and perfect texture made from simple ingredients you can cook quickly on the stovetop

Ingredients
1 cup sourdough starter (active or discard
2 cups all-purpose unbleached flour
½ cup warm water (adjust as needed)
2 tbsp extra-virgin olive oil
1 tsp salt
1 tsp baking powder
Directions
Mix sourdough starter, warm water, and olive oil in a large bowl.
Whisk flour, salt, and baking powder in another bowl, then add gradually to the wet mixture. Stir until a shaggy dough forms and knead 5–7 minutes until smooth.
Rest the dough for 30 minutes at room temperature or refrigerate overnight.
Divide dough into 6–8 pieces and roll each into a thin round about ⅛ inch thick.
Heat a dry skillet or lightly oiled griddle over medium-high and cook flatbreads 1–2 minutes per side until puffed and golden.
Stack cooked flatbreads and cover with a towel to keep warm. Brush with olive oil and herbs.
