Sourdough Flatbread

Soft and chewy sourdough flatbread with great flavor and perfect texture made from simple ingredients you can cook quickly on the stovetop

Ingredients

  • 1 cup sourdough starter (active or discard

  • 2 cups all-purpose unbleached flour

  • ½ cup warm water (adjust as needed)

  • 2 tbsp extra-virgin olive oil

  • 1 tsp salt

  • 1 tsp baking powder

 

Directions

  1. Mix sourdough starter, warm water, and olive oil in a large bowl.

  2. Whisk flour, salt, and baking powder in another bowl, then add gradually to the wet mixture. Stir until a shaggy dough forms and knead 5–7 minutes until smooth.

  3. Rest the dough for 30 minutes at room temperature or refrigerate overnight.

  4. Divide dough into 6–8 pieces and roll each into a thin round about ⅛ inch thick.

  5. Heat a dry skillet or lightly oiled griddle over medium-high and cook flatbreads 1–2 minutes per side until puffed and golden.

  6. Stack cooked flatbreads and cover with a towel to keep warm. Brush with olive oil and herbs.
