Blaxican Seared Barracuda with Garlic Lemon Butter Sauce

A beautifully seared barracuda with a bold spice crust, finished in a rich garlic lemon butter sauce with fresh thyme and green onions.

Ingredients

  • 2 lbs fresh barracuda fillets, portioned

  • 2 to 3 tbsp Blaxican Fajita Seasoning

  • 2 tbsp avocado or canola oil

  • 4 tbsp unsalted butter, divided

  • 4 cloves garlic, finely minced

  • 2 tbsp green onion whites, finely minced

  • 3 to 4 fresh thyme sprigs

  • ½ cup seafood stock

  • Zest and juice of 1 fresh lemon

  • 2 tbsp capers, optional

  • Salt and freshly cracked black pepper, to taste

  • 2 to 3 tbsp green onion tops, thinly sliced

  • Fresh lemon zest, for garnish

 

Directions

  1. Pat the barracuda fillets dry and season all sides generously with the Blaxican Fajita Seasoning.

  2. Heat the oil in a large stainless steel skillet over medium high heat. Sear the fish for 3 to 4 minutes, then flip and cook another 2 to 3 minutes until cooked through. Transfer to a plate.

  3. Reduce the heat to medium. Add 1 tablespoon butter, garlic, green onion whites, and thyme. Cook for about 1 minute until fragrant.

  4. Add the seafood stock, lemon juice, lemon zest, and capers. Scrape up the browned bits and simmer for 3 to 4 minutes until reduced by about half.

  5. Reduce the heat to low and remove the thyme stems. Add the remaining 3 tablespoons cold butter a little at a time, swirling until the sauce is rich and glossy. Season with salt and pepper to taste.

  6. Return the barracuda to the skillet and spoon the garlic lemon butter sauce over the fish until warmed through.

  7. Finish with sliced green onion tops and fresh lemon zest. Serve immediately.
