Blooming Onion

Tender baked onions opened like flowers and filled with a savory mushroom and cheese mixture, then baked until golden and bubbly. Served with a creamy garlic soy yogurt sauce for dipping.

Ingredients

  • 6 onions

  • Butter

  • 3 tbsp olive oil

  • 2 to 3 cloves garlic, minced

  • Salt, to taste

  • Black pepper, to taste

  • Paprika, to taste

  • Italian herbs, to taste

  • Mushrooms, chopped

  • 150 g cheese, shredded

  • 3 tbsp Greek yogurt

  • 2 tbsp soy sauce

  • Green onions, sliced

 

Directions

  1. Cut the onions into a blooming flower shape, being careful not to cut all the way through. Place them in a greased baking dish and add a small piece of butter to the center of each onion.

  2. Mix the olive oil, garlic, salt, pepper, paprika, and Italian herbs. Brush the onions generously with the seasoned oil and sprinkle with a portion of the cheese.

  3. Bake at 350°F (180°C) for 30 to 35 minutes until the onions begin to soften.

  4. While the onions bake, cook the mushrooms in a skillet until golden brown. Stir in some of the shredded cheese.

  5. Remove the onions from the oven and fill the centers with the mushroom mixture. Top with the remaining cheese.

  6. Return to the oven and bake for 10 more minutes until the cheese is melted and bubbly.

  7. Mix the Greek yogurt, soy sauce, and a little garlic to make the dipping sauce. Serve alongside the hot onions and garnish with green onions.
