Calzone Rustica

A handheld Easter style calzone filled with creamy ricotta, mozzarella, Parmesan, and chopped Italian meats, all baked inside golden dough until hot and melty.

Yield: 2 calzones

Cook Time: 20-25 minutes

Ingredients

  • 2 pizza dough portions

  • 15 oz ricotta cheese

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ¼ lb deli ham, chopped

  • ¼ lb hard salami, chopped

  • ¼ lb pepperoni, chopped

  • 1 large egg

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • 1/2 tsp black pepper

  • Pinch salt only if needed

  • 1 egg

  • 1 tbsp water

 

Directions

  1. Preheat oven to 400°F and line a baking sheet with parchment.

  2. In a large bowl mix ricotta, mozzarella, Parmesan, chopped ham, chopped salami, 1 egg, Italian seasoning, garlic powder, black pepper, and a very small pinch of salt only if needed.

  3. Roll out each dough portion, divide the filling between the two, and place it on one half of each round leaving room around the edges.

  4. Fold the dough over like a calzone, press out excess air, and crimp the edges tightly to seal.

  5. Whisk the remaining egg with 1 tablespoon water and brush over the tops. Cut a small slit in the top of each for steam.

  6. Bake 20 to 25 minutes until deep golden brown and cooked through. Let rest 5 to 10 minutes before slicing.
