Cheesy Sausage Tortellini Bake

Ingredients
- 1 lb Italian sausage (mild or sweet, your choice) 
- 1 small onion, diced 
- 3 cloves garlic, minced 
- 1 jar (24 oz) marinara or pasta sauce 
- 1 can (14.5 oz) diced tomatoes, drained 
- 1 package (19 oz) refrigerated or frozen cheese tortellini 
- 1 cup heavy cream 
- 2 cups shredded mozzarella cheese 
- ½ cup grated Parmesan cheese 
- 1 teaspoon Italian seasoning 
- 1 tbsp sugar (optional) 
- ½ teaspoon red pepper flakes 
Directions
- Preheat the Oven: Preheat your oven to 375°F (190°C). 
- In a large skillet, cook the Italian sausage and the onion until the meat is browned. Add the garlic and cook for 3 minutes. 
- Stir in the marinara sauce, diced tomatoes, heavy cream, Italian seasoning, sugar and red pepper flakes. Simmer for 5 minutes to let the flavors meld. 
- While the sauce simmers, cook the tortellini in boiling water for 2-3 minutes (or until they float). Drain and set aside. 
- In a greased 9x13-inch baking dish, layer half of the sauce mixture, followed by the cooked tortellini. Sprinkle 1 cup of mozzarella cheese on top. Add the remaining sauce and finish with the rest of the mozzarella and Parmesan cheese. 
- Cover with foil and bake for 20 minutes or until the cheese is bubbly and golden.
