Chicharrones En Salsa Verde
A classic comforting Mexican dish with bold tangy flavor made from crispy chicharrones simmered in a charred salsa verde until tender then topped with queso fresco and cilantro.

Ingredients
1 lb tomatillos
2 to 3 jalapeños or serranos
½ white onion sliced
2 cloves garlic
½ cup fresh cilantro
Salt to taste
1 lb pork chicharrones
1 to 2 tbsp oil
1 cup water or chicken broth
Queso fresco crumbled
Fresh cilantro chopped
Directions
Char the tomatillos peppers onion and garlic in a dry skillet over medium high heat until blistered and softened.
Add the charred vegetables to a blender with cilantro and salt then blend until smooth and adjust seasoning.
Heat a little oil in a skillet add the chicharrones and warm them for a minute then pour in the salsa verde.
Add water or broth stir and simmer 10 to 15 minutes until the chicharrones soften and the sauce thickens.
Serve topped with queso fresco and cilantro.
