Chicken Saltimbocca Roll-Ups
These Chicken Saltimbocca Roll-Ups are a savory twist on the Italian classic, featuring juicy chicken, melted provolone, prosciutto, and fresh sage. Pan-fried to golden perfection, this quick and flavorful dinner is perfect for weeknights or date night at home.
Ingredients
- 2 boneless, skinless chicken breasts 
- 8 fresh sage leaves 
- 4 slices provolone cheese 
- 4 thin slices prosciutto or deli ham 
- Flour, for dredging 
- Olive oil, for frying 
- Toothpicks 
Directions
- Slice each chicken breast in half lengthwise, then again if large—aim for 4 thin pieces total. 
- Pound each piece under plastic wrap until about ¼ inch thick. 
- Layer each cutlet with 1 sage leaf, 1 slice of provolone, and 1 slice of ham. 
- Roll tightly and secure with 1–2 toothpicks. 
- Dredge lightly in flour, shaking off excess. 
- Heat oil in a skillet over medium-high. Fry roll-ups seam-side down until golden on all sides and cooked through, about 6–8 minutes total.remove toothpicks
