  1. Prep the Chicken:
    In a bowl, mix ground chicken with your seasoning of choice until just combined. Divide the mixture into 8 equal portions by dividing meat in half, then quarters, then eight equal portions.

  2. Assemble the Tacos:
    Lay out the tortillas on a tray or clean surface. Place a portion of seasoned chicken onto the center of each tortilla and press gently to spread the chicken into a thin, even layer (about ¼" thick). Sprinkle a pinch of breadcrumbs over the chicken side of each taco.

  3. Smash & Cook:
    Heat a flat top or large skillet over medium-high heat and lightly oil the surface.
    Working in batches, place the tortillas chicken-side down onto the hot surface. Press down lightly with a spatula to “smash” the chicken into the tortilla. Cook for 3–4 minutes, until the chicken is browned and cooked through.

  4. Crisp the Tortilla:
    Flip each taco so the tortilla side is now on the flat top. Cook for 1–2 more minutes, until the tortilla is crisp and golden.

  5. Build the Tacos:
    Remove the tacos from the heat and place them in a taco holder or prop them upright. Top each with a generous scoop of Caesar salad.

  6. Finish with Parmesan Crisps:
    Break the parmesan crisps into shards and sprinkle on top of each taco for a crunchy, cheesy finish.

    Serve immediately and enjoy that epic crunch!
