Chickpea Salad

This salad is easy, simple and ready in under 10 minutes!

 

Ingredients

  • 1 Lebanese cucumber, diced

  • 1 can (375g) chickpeas, rinsed and drained

  • 8 ounces of cherry tomatoes, diced

  • 1/2 a red onion, diced

  • 1 avocado, diced

  • Coriander, finely chopped

    Dressing

  • A drizzle of olive oil

  • Salt

  • Juice of half a lemon

 

Directions

  1. Add everything to a salad bowl.

  2. Mix serve and enjoy!
