Chorizo Breakfast Tortillas

When great minds collide you get one heck of a breakfast!

Chorizo Breakfast Tortillas

  • 1 9oz beef chorizo

  • 2 large tortillas

  • 1 c mozzarella cheese

  • 2 medium potatoes

  • 2-3 eggs

  • salt and pepper

optional toppings:

sour cream, salsa, avocado, hot sauce, or anything else you wish to add 🙂

Preperation:

  1. Heat a skillet on medium heat while you peel and cut your russet potatoes into a small dice.

  2. Add 9oz of beef chorizo to the hot skillet at the same time you add the potatoes.

  3. Cook on high for 3 minutes while chopping the chorizo down & mixing the two together.

  4. Turn heat to medium-low and cover with a lid to cook the potatoes tender.

  5. Make a few “wells“ in the skillet and drop your eggs in, leaving the yolks intact. Cover for 3-5 minutes or until your desired doneness.

  6. In a separate skillet heat up a tortilla and then add mozzarella cheese and top with your chorizo mixture.

  7. Remove once cheese is melted and the tortilla is slightly crunchy at the bottom.

** I prefer to dip my tortilla into the chorizo grease before heating it up but do better than me guys **
