Chuletas Guisado (Puerto Rican Stewed Pork Chops)

Ingredients
3 tablespoons EVOO, divided
2 pounds pork chops, thinly sliced (½–1 inch thickness)
6 tablespoons Sofrito (Goya)
1 tablespoon garlic, minced
1 packet Sazon (Goya)
2 cups chicken broth
8 ounces tomato sauce
1 tablespoon white distilled vinegar
¼ cup green olives, sliced
2 teaspoons Mexican oregano
1 bay leaf
1 white onion, sliced
1 bell pepper, sliced
¼ to ½ cup cilantro, chopped
Salt and pepper, to taste
Directions
Place 2 tablespoons of EVOO in a skillet over medium heat.
Mix adobo with 1 tablespoon of EVOO and rub onto the pork chops.
Sear both sides of the pork chops for 2 minutes each side, then remove from the pan.
Deglaze the pan with a splash of broth. Then add the sofrito and garlic to the pan. Cook until fragrant.
Add the tomato sauce, vinegar, and Sazon. Sauté until thickened, about 4 minutes.
Add the broth, olives, oregano, and bay leaf. Stir to combine. Bring to a boil and reduce by ¼ in volume.
Add the pork chops back to the pan. Cover and lower heat to medium-low. Cook until the pork chops are tender, about 10 to 15 minutes per ½-inch of thickness.
Add the onion and bell pepper. Cook and cover for 5 minutes. Remove from heat and stir in the chopped cilantro.
