Citrus Coleslaw

Citrus coleslaw is a bright, refreshing twist on classic slaw, combining shredded cabbage and carrots with a zesty dressing made from fresh citrus juice—typically orange, lime, or lemon. The dressing is lightly sweet, tangy, and often balanced with a touch of honey or sugar, vinegar, and a bit of oil or mayo for creaminess. Ingredients

  • 2 cups cabbage, finely shredded

  • 1 carrot, finely shaved or grated (amount to taste)

  • 1 handful fresh cilantro, finely chopped

  • ½ jalapeño, deseeded, de-membraned, and finely minced

  • ¼ white onion, grated

  • Salt and black pepper, to taste

  • Juice of 1 lemon

 

Directions

  1. Build the Base

    In a medium bowl, combine cabbage, carrot, cilantro, jalapeño, and grated onion.

  2. Season

    Add salt and black pepper to taste. Toss well.

  3. Add Citrus

    Squeeze in lemon juice gradually, mixing as you go. Add sparingly and adjust to your preferred brightness.

  4. Chill (optional)

    Cover and refrigerate for at least 30 minutes before serving to let flavors meld.

    Notes

    Keep the lemon juice light at first-you can always add more, but too much will overpower the slaw.

    Grated onion helps distribute flavor evenly without harsh bites.
