Coconut Rice

Fluffy jasmine rice cooked in rich coconut milk for a creamy, slightly sweet side dish. This simple rice cooker method makes a fragrant rice that pairs perfectly with seafood, grilled meats, and tropical flavors.

Ingredients

  • 2 cups jasmine rice

  • 1 (13.5 to 14 oz) can full fat coconut milk

  • 1 cup water

  • 1 tsp salt

  • 1 to 2 tbsp sugar

  • Optional:

    Fresh cilantro

    Lime zest

    Toasted coconut flakes

    Green onions

 

Directions

  1. Rinse jasmine rice several times until the water runs mostly clear.

  2. Add coconut milk, water, salt, and 1 tablespoon sugar to the rice cooker pot and stir to combine.

  3. Add the rinsed rice and stir gently.

  4. Close the lid and run the normal rice cooker cycle.

  5. Once the cooker switches to warm, leave the lid closed and let the rice rest 10 to 15 minutes.

  6. Fluff with a fork and add additional sugar if you prefer it sweeter. Garnish with cilantro, lime zest, toasted coconut, or green onions if desired.
