Cod Piccata
Delight your palate with this tangy and savory Cod Piccata. Fresh cod fillets are paired with a zesty lemon and caper sauce to create a refreshing dish perfect for any occasion.
Ingredients
- 4 cod fillets (about 6 oz each) 
- Salt and pepper, to taste 
- 1/2 cup all-purpose flour, for dredging 
- 4 tablespoons unsalted butter 
- 1/4 cup fresh lemon juice 
- 1/4 cup chicken stock or fish broth 
- 1/4 cup brined capers, rinsed 
- 1/4 cup fresh parsley, chopped 
- 1 tablespoon olive oil 
Directions
- Season cod fillets with salt and pepper. 
- Dredge the fillets in flour, shaking off excess. 
- In a large skillet over medium-high heat, melt 3 tablespoons of butter with the olive oil. When butter and oil start to sizzle, add the fillets and cook for about 5 minutes on each side until browned. Remove fillets and set aside. 
- Add lemon juice, chicken stock, and capers to the skillet. Bring to boil, scraping up browned bits from the pan for extra flavor. 
- Check seasoning, adding more salt and pepper if needed. Return all the fillets to the pan and simmer for 2 minutes. 
- Remove fillets to platter. Add remaining 1 tablespoon butter to the sauce and whisk vigorously. Pour sauce over fish and garnish with parsley. - Notes to Make It Better: Ensure your skillet is properly heated before adding the fish to achieve a beautiful golden-brown sear. • For an added touch, grate some fresh lemon zest over the fish just before serving for a zesty kick. • Consider serving alongside a light salad or steamed vegetables to balance out the dish.
