Cookie Butter Cookies

Soft, chewy cookies loaded with creamy Biscoff cookie butter, chunks of crushed Biscoff cookies, and sweet white chocolate chips. Perfectly golden on the edges with melty, gooey centers. The ultimate treat for cookie butter lovers!

Cook Time: 10-12 minutes
Special Equipment: cookie sheets, stand or hand mixer.

 

Ingredients

  • ½ cup butter, softened

  • ½ cup cookie butter (Biscoff)

  • ⅔ cup light brown sugar, tightly packed

  • 1 large egg

  • 1 ¼ tsp vanilla extract

  • 1 ½ cups + 1 tbsp all-purpose flour

  • ½ tsp baking soda

  • 1 cup crushed Biscoff cookies (leave some chunks)

  • ½ cup white chocolate chips

 

Directions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In the bowl of a stand mixer, cream together butter, cookie butter, and brown sugar until light and fluffy. Mix in the egg and vanilla until well combined.

  3. In a separate bowl, whisk together flour and baking soda. Add to wet ingredients in two additions, mixing until almost combined.

  4. Fold in crushed Biscoff cookies and white chocolate chips until fully incorporated.

  5. Using a 2-tablespoon scoop, drop dough onto prepared baking sheet. Top each cookie with ½ tablespoon cookie butter. Bake for 10–12 minutes, or until edges are golden.

  6. Remove from oven, sprinkle with extra cookie crumbs, and gently press them into the warm cookie butter topping. Cool slightly before serving and enjoy
