Cookie Dough Protein Blondies

These blondies taste like sneaking a spoonful of cookie dough—but baked, sliceable, and better-for-you. They’re soft, gooey, and loaded with melty chocolate chips, with a protein boost.

Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1/3 cup nut butter (peanut, almond, or cashew)1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1 scoop vanilla protein powder

  • 1/4 tsp baking soda

  • 1/3 cup chocolate chips

 

Directions

  1. Preheat oven to 350 degrees.

  2. Combine all ingredients except chocolate chips in a food processor or high-speed blender until smooth.

  3. Stir in chocolate chips.

  4. Pour in a lined pan.

  5. Bake for 30 minutes.

  6. Crucial: Let them cool for at least an hour before cutting so they set.
