Cornbread Waffles with Chili

Crispy golden cornbread waffles topped with warm chili for an easy, hearty meal. Finish with cheese, sour cream, and green onions for a loaded chili waffle.

Ingredients

  • 1¾ cups all purpose flour

  • 1¼ cups yellow cornmeal

  • 1 Tbsp baking powder

  • 1 tsp granulated sugar

  • 1 tsp salt

  • 2 cups milk

  • 3 Tbsp vegetable or canola oil

  • 2 large eggs

  • Your favorite chili

  • Shredded cheese, optional

  • Sour cream, optional

  • Chopped green onion, optional

 

Directions

  1. Preheat the waffle iron. In a large bowl, combine the flour, cornmeal, baking powder, sugar, and salt.

  2. Add the milk, oil, and eggs and stir until smooth, being careful not to overmix.

  3. Lightly coat the waffle iron with nonstick cooking spray. Add the batter and cook in batches until the waffles are golden and crisp.

  4. Serve the warm cornbread waffles topped with chili and, if desired, shredded cheese, sour cream, and chopped green onion.
