Crockpot Dump & Go Beef Stew

Ashton (@JustLiikeGranny) sent me this on today with a note:

So today y’all… I did NOT feel like cooking. But, I wanted a good homemade meal I can eat after getting back from all of my errands today. So I decided to make a Beef Stew from things I had in the house and a few of my pantry items, which this could be considered an Episode in my Pantry Series.

Crockpot Dump & Go Beef Stew

Ingredients

  • 1 Package of Stew Meat

  • 1 Package of Brown Gravy Mix

  • 1 Large Yellow Onion, Chunked

  • 4 Stalks of Celery, Chopped

  • 1 Package of Baby Carrots

  • 2 TBSPS Fresh Minced Garlic

  • 2 C. Beef Broth

  • 1 C. Tomato Juice

  • 1 C. Red Wine (Optional)

  • 1 TBSP Dried Parsley

  • 1/4 C. Tomato Paste

  • 2 TSPS Black Pepper or to Taste

  • 2 Bay Leaves

  • 1 TSP of Oregano

  • Salt to Taste

Directions

  1. Prepare all of your vegetables. Add them to your crockpot along with your meat.

  2. Mix remaining items together except for the oregano, bay leaves and salt. Pour on top of the veggies and meat. Mix together.

  3. Add bay leaves. Sprinkle with salt and oregano. Cook on LOW for 6-8 hours.

  4. Serve and enjoy with some warm crusty bread!

If you didn’t use red wine, add 1 cup more of beef broth or tomato juice. Depending on your preference!
