Crown Royal Creamy Loaded Potato Soup

Ingredients

  • 4 large russet potatoes, peeled and chopped

  • 4 tbsp butter

  • 1 tbsp minced garlic

  • ½ yellow onion, diced

  • 6 cups chicken broth, divided

  • 2 tsp salt, to taste

  • 2 cups milk (or additional broth)

  • 1 cup shredded sharp cheddar cheese

  • 1 cup shredded Muenster cheese

  • ½ tsp cracked black pepper, to taste

  • Splash of Crown Royal whiskey (optional)

    Toppings:

    Extra cheese

    Crumbled bacon

    Green onions

 

Directions

  1. Melt butter in a large pot over medium-high heat. Add garlic and cook 1–2 minutes until fragrant.

  2. Add onion, potatoes, 2 cups of the broth, and 1 tsp salt. Bring to a boil, then simmer 12–15 minutes until potatoes are fork-tender.

  3. Add remaining broth and milk. Add a splash of Crown Royal if using. Blend until smooth using an immersion blender.

  4. Stir in cheddar and Muenster until melted and creamy. Season with black pepper and additional salt if needed.

  5. Serve hot and top with cheese, bacon, and green onions.
