Seven Layer Double Patty Smash Burgers

Ingredients
For the Smash Burgers:
1 lb prime rib ground beef ( formed into four 4 oz balls)
Blaxican Fajita Seasoning (or your favorite fajita/steak seasoning)
4 slices smoked Gouda cheese
2 brioche burger buns, toasted
1 large tomato, sliced
For the Homemade Burger Sauce:
1/2 cup mayonnaise
2 tbsp ketchup
2 tbsp pickle juice
1 tsp Worcestershire sauce
2 tbsp red pepper jelly
For the Red Pepper Jelly Bacon Jam:
6 slices thick-cut bacon, chopped
1/2 cup red pepper jelly
1 small onion, finely diced
2 cloves garlic, minced
1/2 cup brown sugar
1/2 cup honey
1 tsp crushed red pepper flakes (optional for heat)
Directions
Make the Bacon Jam: In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving about 1 tbsp of bacon fat in the pan.
Add the diced onions and sauté until soft (about 5 minutes).
Stir in the garlic, red pepper jelly, honey, sugar and red pepper flakes. Simmer for 5-7 minutes until it has thickened.
Add the bacon back in, stir and remove from heat. Set aside.
Prepare the Burger Sauce: Mix all sauce ingredients in a bowl until smooth. Refrigerate until ready to use.
Smash & Cook the Burgers: Heat a cast-iron skillet or griddle over medium-high heat until smoking hot.
Place a 4 oz beef ball on the skillet and immediately smash it flat with a spatula (or use a burger press for even thinner patties).
Season generously with Blaxican Fajita Seasoning (or your favorite seasoning).
Cook for about 2 minutes until the edges are crispy, then flip.
Immediately add a slice of smoked Gouda and let it melt while the other side cooks (another 1-2 minutes).
Assemble the Ultimate Smash Burger: Toast the brioche buns lightly on the griddle with the burger grease.
Spread a generous layer of burger sauce on the bottom bun.
Add two cheesy smash patties, then top with a spoonful of bacon jam and your sliced bacon.
Add a seasoned slice of tomato for freshness.
Top with burger sauce and crown it with the top bun and press gently.
