Easy Grilled Chicken Salad

This recipe is for an easy Grilled Chicken Caesar Salad. The ingredients include chicken thighs, Greek salad seasoning mix, olive oil, apple cider vinegar, romaine lettuce, bacon, croutons, shaved parmesan cheese, and black pepper. The chicken is marinated in the seasoning mix, olive oil, and vinegar for 20-40 minutes before being grilled in a pan. The bacon is cooked in the oven. The lettuce, cheese, croutons, bacon, and chicken are all combined in a bowl, topped with Caesar salad dressing, and served.

Ingredients:

  • 4 chicken thighs

  • 1 packet of greek salad seasoning mix

  • 1/4 cup olive oil

  • 2 tbsps apple cider vinegar

  • 2 heads of romain lettuce, chopped

  • 8 slices of bacon, cooked

  • 1 cup of croutons

  • 1/2 cup of freshly shaved parmesan cheese

  • Fresh cracked black pepper

Recipe:

  1. In a bowl add your chicken, seasoning packet, olive oil and apple cider vinegar. Let it marinate for at least 20-40 minutes before cooking it.

  2. While the chicken is marinating go ahead and put your bacon in the oven using my guide.

  3. Once the bacon is done set it to the side and keep that yummy bacon grease for other recipes!

  4. In a grill pan spray it a little bit so that it doesn’t stick as much and turn the heat up to high. You want to create grill marks on your chicken to recreate the feeling of actually grilling the salad outside.

  5. Cook the chicken in each side for about 5-7 minutes or cooked through.

  6. Once done set to the side and allow the chicken to rest.

  7. While the chicken and the bacon is done, go ahead and chop up your lettuce and add it to a large bowl.

  8. Add in your shaved parmesan cheese and croutons as well.

  9. Chop up the bacon and slice the chicken and add it to the bowl as well.

  10. Top with your favorite Cesar salad dressing, I like Kens Steakhouse Cesar Salad Dressing.

Then just serve and enjoy!
