Fried Bologna Sandwich with Sriracha Mayo

Ingredients

  • 6–8 slices thick-cut bologna (3–4 per sandwich)

  • 4 slices bread white, sourdough, or brioche

  • 2 slices cheese American, cheddar, or pepper jack

  • 1 small tomato, sliced

  • 2–4 leaves lettuce romaine or iceberg

  • Butter for toasting the bread

  • Optional extras: pickles, red onion slices, fried egg

Sriracha Mayo:

  • ½ cup mayonnaise

  • 1–1½ tablespoons Sriracha

  • ½ teaspoon lime juice (optional)

  • ¼ teaspoon garlic powder

 

Directions

  1. In a small bowl, mix mayonnaise, Sriracha, lime juice, and garlic powder until smooth. Set aside.

  2. Butter one side of each bread slice and toast in a skillet over medium heat until golden.

  3. Cut a small “X” in the center of each bologna slice.

  4. Fry bologna in a skillet over medium heat for 1–2 minutes per side until browned and edges crisp. If using cheese, place cheese over the hot bologna to melt.

  5. Spread Sriracha mayo on toasted bread. Layer lettuce, tomato, fried bologna, and optional toppings.Close the sandwich, slice, and serve warm.
