Grilled Strawberry Shortcake
If you're grilling dinner, you may as well grill your dessert! This dessert layers grilled pound cake, grilled strawberry skewers, and foil packet macerated berries. Sorry, we didn't grill the homemade whipped cream!
Ingredients
10 oz pound cake, more or less based on availability
1 pint strawberries
Raspberries, blackberries, optional
2-4 Tbsp brown sugar, more to taste
1-2 tsp vanilla extract, optional
¾ cup cold, heavy whipping cream
1-2 Tbsp powdered sugar, more or less to taste

Directions
Prepare for the grill: Preheat your grill to medium low heat. Add a bowl to the freezer for the whipped cream. Slice the pound cake into even slices, about an inch thick.
Wash the strawberries. Slice off the green and cut strawberries in half. Divide them in half.
With one half of the strawberries, skewer halves onto skewers.
For the other half, get a piece of foil large enough to create a packet. Place strawberries in the center of the foil. Add some blackberries and raspberries if you’re like us and had some.
Add brown sugar and a pinch of salt and toss. Add a splash of vanilla if desired. Fold the foil to create a sealed packet.
Grill: On oiled grates, toast each side of the pound cake slices until charred. These will char VERY quickly with the sugar content in the cake
Grill the skewered strawberries, cut side down, until charred and remove from heat.
Add the foil packet to the grill and let cook a few minutes, or until the sugar is melted and the berries are softened. Careful, the packet is steaming!
Make the whipped cream: Remove the bowl from the freezer if you chilled one ahead of time. Add the cold heavy cream, powdered sugar, and a pinch of salt. Using a hand mixer, mix on medium high until stiff peaks form, but be careful not to overchurn.
Serve: Choose your serving dishes. I recommend something like a wine or martini glass, or a stemless wine glass. It tastes better when you can see the layers!
Cube the pound cake. Layer each glass (4-6, depending on size) with pound cake, grilled strawberries, then the berry sauce, continuing the layers. Garnish with the whipped cream.
