Ingredients
1 cup lactose-free cottage cheese (full-fat or low-fat)
½ cup shredded cheddar cheese
1 tsp taco seasoning
1–2 tbsp salsa or diced tomatoes with green chilies (like Rotel)
1 pound chorizo
Directions
Add the cottage cheese to a blender or food processor and blend until completely smooth and creamy. This step removes the curdy texture and forms a silky queso base.
Add taco seasoning and salsa to the blender. Pulse again to mix.
Microwave in 30–60 second bursts, stirring between each round, until the cheese is melty and the queso is smooth. Alternatively, heat gently over low heat on the stove, stirring often.
In a separate pan, cook the chorizo until browned and fully cooked.
Stir the cooked chorizo into the queso. Taste and adjust by adding more seasoning, salsa, or hot sauce.
If the queso is too thick, add a splash of milk or water to reach your desired consistency.
